How to choose a roast level for your brewing method
Light, medium or dark — what changes in the cup, and which roast suits drip, espresso or milk-based drinks.

Roast level is one of the biggest factors behind what ends up in your cup. The same green coffee roasted to different levels will show noticeably different acidity, sweetness and bitterness.
Light roast
Keeps more of the origin character. Usually brighter and fruitier, and well suited to drip or pour-over brewing where clarity matters.
Medium roast
A balance of acidity and sweetness that is easy to drink and works with many methods, from drip to French press and moka pot.
Dark roast
Bold, bittersweet and full-bodied with pronounced roast character. It holds up well in milk drinks and Thai-style iced coffee.
Quick guide
- Black coffee with nuanced flavour — start with light to medium
- Espresso machine and milk drinks — medium-dark to dark
- Large batches of iced coffee for a café — dark roasts stay flavourful over ice
